Potato recipes!
The daupinhoise potato thread got me thinking, I need to find more ideas to cook potatoes. I'm always making french fries, roasted potatoes with lemon/garlic, and boiled potatoes for potato salad. Help me with some new ideas!

Jacket Potatoes are great.
(or as my guy like to call them "potato bombs")
Just cook a large potato in the oven with the skin on (washed of course) and then when it is perfectly cooked, split it open, cover generously with garlic butter, sauteed onions, chopped bacon, coleslaw, sour cream, chives etc etc.
Good with leftover savoury mince too.
Home-made hash browns
Peel & grate a few potatoes. Squeeze out excess juice and discard. Season with salt & pepper and pop onto a tray under the grill (portion sizes of hash browns as per your style).
OR - you can pop it all into a pan, cook on the stove top for a bit, then slid it under the grill. It's like a giant potato fritter and is sooooo good. ![]()

Potatoes and sausage.
1 large chopped onion
1 lb smoked sausage
4 large potatoes peeled and diced
saute onions and sausage together in a 2 quart pot with just a touch of cooking oil, until onions just start to brown. Add about 4 cups water, you could use chicken broth if you have it handy and potatoes. Salt and pepper to taste. Cook until potatoes get mushy. Serve as is like a nice thick soup/stew or over rice.
I love mine over rice.

I like making baked oven "fries" and crash hot potatoes. I love both of those as leftovers for breakfast in the morning, so I usually make a lot. Here's the recipe for crash hot potatoes:

Wow mommy, those crash hot potatoes look so good
Do you like sweet potatoes Koukou? I use them a lot in place of normal potatoes. Sometimes I roast them whole and put a bit of cinnamon and sour cream in or I cut them into wedges, toss in olive oil and rosemary or paprika and bake in the oven. Sometimes I make sweet potato mash. Hubby dislikes them so he always gets a normal spud ![]()

They're awesome! Really good with pretty much any grilled meat - or for breakfast, as I mentioned in my previous post.
Meant to say that sometimes I make latkes too, but those are kind of a pain, since you have to shred the potatoes, soak them, drain them completely, etc, etc, etc.
