Cous Cous
Hi
I'm vegetarian and a very fussy eater but I love cous cous. The trouble is the only recipes I can find are the traditional ones of very spicy cous cous with apricots, sultanas and chick peas, none of which I like.
Any alternative suggestions would be much appreciated.

My son is a vegetarian and he likes cous cous too. I like to use it as a base for other ingredients for example I roast heaps of mediteranian vegetablies ie capsicum, zucchini, red onion, garlic, eggplant (if you like it, he doesn't). Heap on top of cous cous (with lemon juice in the soaking liquid) topped with tahini or hummus mixed with yoghurt.
And really good for you as well!

I like to saute shallots, garlic and almonds or pine nuts and toss into couscous along with peas and scallion.

I like taboulé google for a recipe from Libano
I do not cook couscous it becomes soft with lemon juice and the humidity of the vegs you add to it
if liked I can find out my recipe coming from a friend who llived in Libano ![]()

To me cous cous is like rice or grits, it's a nice base for anything I like to toss with it! I've tried a traditional morrocan recipe and it was a bit heavy on the spices, so I just do my own thing now. Sometimes I use veg like Sheryls, sometimes I make it more fruity....or both....I say, do it how you are going to like it! If it tastes good, does it matter if it's not "traditional" or follows a recipe?

For veggie cous cous I love using it instead of rice for curries or other veggie stews. I also love cous cous salad with a lemon vinagraitte and tomatoes, peppers and parsley in the summer.
I always steam my cous cous as I've made the experience that it gets much lighter that way and not as sticky.
