Ingredients that "make" a dish

I think dried oregano is what "makes" a pizza. Without it it's ok but with it pizza is great.

What other ingredients do you feel "make" a dish special?

A little bit of seseme oil added to stir fried vegetables.

Ground green cardamon mixe.d in with the mixed pice when making Hot Cross Buns or cakes that have dried fruit in them

A good vinegar makes a green sallad. Eating a lot of those so it's the first thing that springs to mind.

Just a little red wine in pasta sauce changes the flavour completely

High quality cheeses are wonderful and make a lot of difference in a dish.  It's true for me too of any good dairy product - quality milk, cream, butter and of course, eggs that are organic and very fresh.  The first time I cooked with farm fresh eggs myself, as opposed to the typical pale version we get in grocery stores, I was so surprised at the difference in flavor and color.

Cumin in Tuna.
Smoked paprika to any salad dressing.
Bay leaf added to rice pudding takes away the boiled milk tast.
Garlic finds its home in most dishes, cooked or raw.
Home grounded pepper mix...red, brown, black...
